Try this easy-to-make tater tot hotdish recipe the next time you�re in the mood for tater tots.

1 pound ground beef
1 cup onion, chopped
1 cup celery, chopped
2 cans (10 � oz. each) condensed cheddar cheese soup
1 (11 oz.) can whole kernel corn with red and green peppers, drained
1 cup picante sauce
2 teaspoons chili powder
1 teaspoon pepper
1 (16 oz.) package frozen potato nuggets (tater tots)
cup shredded taco-seasoned cheese

Directions

Preheat oven to 375 degrees.

Cook beef, onion, celery, and garlic in 10-inch skillet over medium heat 8 to 10 minutes; stirring occasionally; until beef is brown; drain.

Stir soup, corn, picante sauce, chili powder, and pepper into beef mixture. Spoon into ungreased 2-quart casserole dish. Top with potato nuggets.

Bake uncovered 40 minutes. Sprinkle with cheese. Bake an additional 5 to 10 minutes or until cheese is melted.

Here's a great Tex Mex recipe if you love cheesy hash browns with a little extra kick.

3 cups (24 oz.) package frozen potatoes O'Brien with onions and peppers
1 cup thick and chunky salsa
2 teaspoons chili powder, optional
1 cup shredded Colby Monterey Jack cheese blend

Directions

In a large nonstick skillet, brown ground beef. Remove beef from skillet; cover to keep warm. Discard drippings.

In the same skillet, heat oil over medium heat until hot. Add potatoes; cook and stir 8 to 10 minutes or until browned. Stir in salsa, chili powder, and ground beef. Cook 5 to 8 minutes or until thoroughly heated, stir occasionally.

Sprinkle with cheese. Cover and cook 2 to 4 minutes or until cheese is melted.

This delicious hot dog recipe will add some fun to your dinner table.

1 1/3 cups dry mash potato mix
1 1/3 cups water
1/3 cup milk
2 tablespoons margarine or butter
teaspoon salt
cup sweet pickle relish
2 tablespoons mayonnaise or salad dressing
1 tablespoon instant minced onion
2 teaspoons mustard
4 to 6 hot dogs

Directions

Preheat oven to 350 degrees.

Prepare mashed potatoes as directed on package, using water, milk, margarine and salt. Stir in relish, mayonnaise, onion and mustard. Spread into ungreased 1-quart casserole.

Cut each hot dog lengthwise in half, then crosswise in half. Insert hot dog pieces around edge of mashed potatoes.

Bake 25-30 minutes.

Heres a great meatless polenta recipe for those who enjoy this traditional Italian staple.

Polenta

1 cups yellow cornmeal
2 cups chicken broth
2 tablespoons margarine or butter
1 egg, slightly beaten
cup grated Parmesan cheese

Filling

1 tablespoon olive or vegetable oil
1 cup coarsely chopped onions
1 cup coarsely chopped green bell pepper
1 small zucchini, cut into -inch cubes
1 (15.5 oz.) can dark red kidney beans, drained
1 (14.5 oz.) can tomato paste
1 cup shredded mozzarella cheese

Directions

Preheat oven to 350 degrees.

Grease a 9 or 10-inch deep-dish glass pie pan.

In medium saucepan, combine cornmeal and broth. Cook over medium heat until mixture begins to boil, stirring constantly. Remove from heat; stir in margarine, egg and Parmesan cheese. Set aside.

Heat oil in large skillet over medium-high heat until hot. Add onions and bell pepper; cook and stir until tender. Stir in zucchini, beans, tomatoes and tomato paste. Bring to a boil. Reduce heat to medium-low; cook 5 minutes.

Spread cornmeal mixture in bottom and up sides of greased pie pan. Spoon vegetable mixture over top. Sprinkle with mozzarella cheese.

Bake 30-35 minutes or until set. Let stand 5 minutes before serving.

Heres a tasty variation of Mexican rice, and best of all its simple and quick to make.

3 cups cooked white rice
1 cup frozen bell pepper stir-fry
1 (14.5 oz.) can diced peeled tomatoes with chili or salsa seasonings, undrained
1 (8 oz.) can tomato sauce

Directions

Preheat oven to 350 degrees.

In ungreased 1 -quart casserole combine all ingredients; mix well. Bake 35-40 minutes.

A popover recipe that involves pizza? Cant get better than that. Dont be surprised if unexpected company pops over to help you enjoy this tasty casserole.

1 pound ground beef
1 (14 or 15 oz.) jar or can pizza sauce
2 eggs
1 cup milk
1 tablespoon vegetable oil
1 cup all purpose flour
teaspoon salt
2 cups shredded cheddar cheese
2 medium green onions, chopped (optional)

Directions

Preheat oven to 425 degrees.

Cook beef in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in pizza sauce. Heat to boiling; reduce heat to low and keep warm.

Beat eggs, milk, oil, flour, and salt with wire whisk until foamy. Spoon beef mixture into ungreased 13x9x2-inch rectangular baking dish. Pour egg mixture over cheese. Sprinkle with onions.

Bake uncovered 25-30 minutes. Serve immediately.

Enjoy this chicken casserole recipe with its peppy southwestern flavor.

1 tablespoon vegetable oil
1 pound boneless, skinless chicken breast halves, cut into 1-inch pieces
1 (16 oz.) bag frozen corn, broccoli, and red pepper
1 (15 oz.) can black beans, rinsed and drained
1 cup thick and chunky salsa
2 cups tortilla chips, coarsely crushed
1 cup cheddar cheese, shredded

Directions

Heat oil in 10-inch skillet over medium-high heat. Cook chicken in oil, stirring occasionally, until brown.

Stir in vegetables, beans and salsa; reduce heat to medium. Cover and cook 6 to 8 minutes, stirring occasionally, until vegetables are crisp but slightly tender.

Top with tortilla chips and cheese. Cover and cook about 2 minutes or until cheese is melted.
